Sweet, sour, spicy chicken with...

pineapple jasmine rice...

*2 chicken breasts marinated in sweet & sour sauce and a tablespoon of jarred jalapenos (mine marinated for about 7 or 8 hours) - I also seasoned the chicken with garlic salt, pepper and chicken seasoning.
*Jasmine rice
*Chunk pineapple

Preheat oven to 375 degrees. Start with the rice (follow directions on packet), add garlic salt and crushed red peppers. When rice has about 25 minutes left, heat a grill pan to high. Place chicken breasts on grill pan and sear on both sides. Spray Pam in a baking dish. Put seared chicken breasts in baking dish along with the remainder of the sauce and put in oven. Bake for about 25 minutes. When rice is done cooking, add pineapple bits (I also added finely chopped scallions). Serve chicken on top of a bed of rice. YUM! Beware, it was spicy. If you don't like things real spicy (like we do), put less jalapenos in the marinade or leave it out all together.
