Best pot roast T has ever had!

I guess that would be the name of this dish. T was very happy with the outcome. I didn't mind it either but I guess I am still not a total pot roast fan.

All I did was:

Bought a chuck roast (I think that's what it was - it's about 8 or so inches long), I cut it in half and froze half. The other half I...

put it on a plate and put a steak seasoning, onion powder and garlic salt rub all over it. Then rub generously with brown sugar. Put in a ziplock bag with Worcestorshire Sauce to marinate. Marinate for at least 6 hours.

In crockpot, put carrots and celery cut into 2" pieces, sweet onion quartered and whatever other veggie you prefer. In skillet, sear roast on all sides quickly then place in crockpot. Add two bay leaves and one cup tomato juice. Cook on low heat 10 - 12 hours or high heat for 6 - 7 hours.

At the end of preparation, if gravy needs to be thicker, place meat on plate - cover, place veggies on a plate - cover, take left over sauce, place in sauce pan. In a small cup, place 1 TBSP of flour and 3 TBSP of sauce. Mix. Slowly add back to sauce. This should thicken it and make a thicker gravy.

My mashed potatoes was a ranch/mozzerella mashed potato. I did red potatoes, peeled. When boiled til tender, drain and add ranch dressing (eyeball it to make it moist..you can always add more), spray butter, and moz cheese. Mash well and serve with above gravy (which is AWESOME - I loved the gravy). ENJOY!

Sweet, sour, spicy chicken with...

pineapple jasmine rice...

*2 chicken breasts marinated in sweet & sour sauce and a tablespoon of jarred jalapenos (mine marinated for about 7 or 8 hours) - I also seasoned the chicken with garlic salt, pepper and chicken seasoning.
*Jasmine rice
*Chunk pineapple

Preheat oven to 375 degrees. Start with the rice (follow directions on packet), add garlic salt and crushed red peppers. When rice has about 25 minutes left, heat a grill pan to high. Place chicken breasts on grill pan and sear on both sides. Spray Pam in a baking dish. Put seared chicken breasts in baking dish along with the remainder of the sauce and put in oven. Bake for about 25 minutes. When rice is done cooking, add pineapple bits (I also added finely chopped scallions). Serve chicken on top of a bed of rice. YUM! Beware, it was spicy. If you don't like things real spicy (like we do), put less jalapenos in the marinade or leave it out all together.

Cream Cheese & Spinach Stuffed Chicken Rolls

Yummo! I tried this recipe last night and it was awesome! Of course, as with most recipes, I changed a few things and went my own way a bit. Here is the recipe (with my changes noted). Recipe was found on Cooks.com.

6 - boneless chicken breasts (I only did 3 since it was just the 2 of us)
1 - 8 oz cream cheese (I used only half of an 8 oz bar)
1/2 c chopped cooked spinach, drained (I used a half of a package of frozen spinach, thawed and squeezed dry)
1 sm clove of garlic, minced (I used 1 tsp of jarred minced garlic)
1/8 tsp nutmeg (I grated fresh nutmeg and eyeballed it)
Salt & pepper to taste
1 large egg beaten w 1 TBSP water
1/2 cup unseasoned dry bread crumbs (I actually used 1/2 cup of French's fried onions)
3 TBSP butter melted (I used I Can't Believe It's Not Butter spray)

Heat oven to 375 degrees. Flatten chicken between sheets of plastic wrap to uniform 1/4" thickness.

In large bowl, beat cream cheese (softened at room temp) with next 5 ingredients until combined. Spoon equal amounts of mixture across narrow end of breasts. Roll jelly roll style, secure with toothpicks.

Dip in egg mixture then roll in crumbs; shake off excess. In baking dish (I sprayed dish with Pam), arrange chicken in one layer, seam side down. Drizzle (or spray) with butter. Bake 25 - 30 minutes or until golden (30 min was perfect).
